My Little Chef - Rolo Cheesecake



  
If you followed my previous posts you will know that William is a fantastic Chef. He really has a passion for it and is something that I am happy to support him through.

The time came again though where he's gone "Daddy, we haven't made Cheesecake for a while. Maybe we should"

(Seriously who would deny cheesecake and one that is being offered to be made for you?)


Most times William has these ideas I will always let him decide what he wants to do; this week he decided that we should make a Rolo Cheesecake.





Ingredients:

  • 1x Packet of Chocolate Digestives
  • Butter
  • 300g Mascarpone Cream Cheese
  • 400g Thick  Cream
  • Gelatine leaves 
  • 150g Caster/Icing Sugar
  • Bag of Rolos
  • 100g of Caramel/Chocolate

Method:

 Break the digestive biscuits up into crumbs.
Then melt the butter and mix with the broken biscuits:


Once combined push and set into your tin.


Mix the Mascarpone, Sugar and Cream together until thick.

 

Break the majority of the Rolos into pieces and add to the cream mix.
Soak the gelatine leafs and mix to melting with a small amount of cream in a saucepan. Then add the mix to you cream. (Mix until thick again if needed)


Take the set biscuit bottom out of the fridge and add the cream and Rolo mix to the top and spread evenly.

Melt the caramel or chocolate over a saucepan of boiling water.
(William's tip: Get an adult to help you with this. The water and steam is very hot!)

Then draw your pattern onto the cheesecake and place the melted chocolate appropriately.



Add remaining Rolo's for decoration and place into the fridge to set.


Then Enjoy!!!

We served ours with Strawberries and cream.

    This looks amazing, I wish my kids cooked! Getting them in the kitchen is always a chore sadly.

    1. Thanks for commenting Ashley. Ah that's a shame! William is and has always been passionate at doing it. Even James like to do little bits but he prefers clean up. I have no idea why on either. It's great though.

      He does have some great ideas. I have no idea how he comes up with it but he does.

  7. I have never thought to use chocolate digestives in a cheese cake but this look so good! I only ever really make a cheesecake but my god its good, love a good cheesecake!
