My Little Chef - Carrot and Coriander Soup

 
Following our involvement with Innocent and GiY #SowandGrowUK campaign we have been trying to create more recipes using more vegetables. William found so many recipes and following that he has a list that he wants to work through.
 
To start with he wanted to make Carrot and Coriander soup, so here it is!
 

Ingredients

500g Carrots
2 Onions
Fresh Coriander
Oil
2 Pints of water
Stock cube


Resources
 
Cutting Board
Utensils
Large Saucepan
Small Saucepan
Blender/Masher
Method
 
 
William started by weighing out 500g of Carrots.

 
He then peeled the carrots. He placed the peelings in the small saucepan to make some stock.
 

 
He then chopped the carrots into chunks.
 
 
William then finely chopped the fresh coriander.
 
 
He then placed it the large saucepan and lightly fried it before placing the chopped carrots in with it.
 
 
William then peeled and finely cut the onions. He then placed the skin into the stock pan and the onions in the large pan with the carrots and coriander.

 
William then added 1 pint of water to the small saucepan with peelings on a low heat.

 
He then added the second pint of water to the carrots, onions and coriander and boiled until soft.

 
The stock was on the low heat for 45 minutes, he then drained the peelings and added the stock cube to add a little more flavour.

 

 
He then added the stock to the large saucepan and stirred thoroughly.

 
Once all of the carrots were soft William used a hand blender to create a smooth mix.

 
This did take a while and he didn't want to miss any so he was stopping and stirring and blended some more.
 
Once it was a consistent smooth mix it was ready to serve. William also wanted some chunky bread so we added some Tiger loaf.


This was time consuming but a really easy activity for children to join in with. It tasted amazing and was a fantastic way to incorporate move vegetables into our day!

Great recipe, ideal for healthy eating on a budget. Much cheaper than buying processed food and better for you. His mum must have taught him well if he knows that you need to put carrots in carrot & coriander soup. You could learn a lot from him.

This looks ace! When is he applying for junior master chef? Also, handy hint, herbs are so much easier with scissors. ;)

Tiger bread is the yummiest bread! The boy has taste!
