My Little Chef - Haddock Chowder


William was going through his recipe books trying to come up with something that would peak his interest. He came across a haddock chowder and although it is suggested as a winter dish he was keen on giving it a go where he hadn't cooked with fish before. As always, I am in full support of him exploring and trying new recipes so thought it was worth a try!


Ingredients


400g Haddock
300g Potatoes
200g Bacon
200ml Cream
200ml Milk
Peas
2 Onions
1 pint of Vegetable/Fish Stock
Resources
Scales
Measuring Jug
Cutting Board
Saucepan
 Frying pan
Utensils
Method



William started by finely chopping 2 onions.


He started by slicing them and then cutting them again into pieces.


William then diced and cubed the bacon.


He then fried the onions and bacon in frying pan until brown and crisp.


William then sliced the potatoes and then cut them into cubes.



William then measured out 200ml of milk into a measuring jug.





He then placed the potatoes, cream and milk into a large pan where he then added 1 pint of vegetable stock. The recipe that he was following did suggest a fish stock but he wanted to use a vegetable one to give a fuller taste.

He then left the pan on a medium heat to gently boil the potatoes in the mix.


Whilst the pan was boiling, William then cut the haddock into chunks.


He then added the haddock to the pan with the milk, vegetable stock and potatoes where he left to simmer for another 10 minutes.


He then added the bacon and onions to the pan and left until all the ingredients were poached and boiled.

William then boiled some gardens peas.



Finally William served the chowder into a bowl and added the peas on top to add some colour to the dish.

This is the first time that he has attempted this dish and it was a success. The fish, potatoes and bacon were all cooked perfectly and came together nicely as a dish. Importantly, it was a simple recipe to follow and quite quick to make!

The richness of the milk and cream created a lovely smooth flavoured sauce to go with the fish and potatoes with the peas being a great accompaniment to the dish but there are other options like leeks and sweetcorn that could also be added.
