My Little Chef- Quiche Lorraine

 
 We decided to take a break from our healthy eating project and look more at a meal that suits the summer weather. With it getting warmer the more we want lighter meals and ones that go hand in hand with a healthy and summery salad; it seemed perfect timing to make a quiche that William has longed to make for a while.

Ingredients
For the Pastry


175g Plain flour, plus extra for dusting
Salt
75g Butter, plus extra for greasing
(alternatively use ready made pastry)

For the Filling

250g Grated Cheese
4 Tomatoes
200g Bacon
5 eggs
100ml Milk
200ml Double Cream
Salt
Ground black pepper
Resources

Rolling pin
Method


William started by measuring out 175g of flour and placing it in a mixing bowl.


He then measured out the butter and combined this with the flour.


Using his hand he rubbed the butter and flour together to form a "breadcrumbs" mixture.



William then added enough cold water to make the crumb mixture come together to form a firm dough.

He then wrapped in clingfilm and then placed the dough to rest in the fridge for 30 minutes.


Once cool and set William lightly dusted the kitchen surface and the rolling pin and began to roll a thin layer to be placed within the greased round tin. Any holes that formed through splits or tears he filled in with more pastry.

 He then filled it with baking beans and placed on a baking tray to bake blind for 20 minutes. William the removed the beans and returned to the oven for another five minutes to cook the base.

Whilst the crust was baking William sliced and chopped the bacon into small pieces.


I then took the crust out of the oven to cool down whilst he fried the bacon until it was fully cooked.


William then chopped tomatoes and placed them in the crust base with the bacon.


He then placed 3/4 of the grated cheese on top of the ingredients.


William then cracked 5 eggs into the mixing bowl.


Then he poured the cream mixed them together with a whisk.


William then gently poured the mix into the tin and topped with more grated cheese. He then baked for 30-40 minutes or until set and when ready I removed from the oven and allowed it to cool and set further.


Once fully baked the cheese should be golden and the middle should have set fully. You do have the options the cut the sides off to make it look neater but we didn't really mind.
This is a really easy recipe and great for both children and adults to do and even better to adapt to the ingredients to your personal taste. For example, William is planning on making another one but flavoured as a cheese, onion and broccoli quiche.

I'm so glad William was in charge with this process and he has finally taught you how to make a quiche. What a little star looking after his dad like that. Well done to him for forcing you to let him put eggs in it.

I've said it before and I will say it again. Send that boy up here to cook for my family and I. lol He is so talented. Well done William.
I made tuna & sweetcorn quiche last week which went down well x

I love quiche. When I worked in a care home we uze to call it omlette pie as several of our service users said they didnt like omlette (but loved omlette pie!!)
