My Little Chef - Sticky Pineapple Muffins


We have been pushing to include as many fruit and vegetables as possible in our diet following on from our campaign work with innocent and GIY to not only grow your own food but to help children have a healthier understanding and eating lifestyle. Now, we haven't done much with fruit and I am sure we will develop some amazing really healthy food with an array of fruit but for now you will have to settle for fruit in cake. (That still counts as healthy, right?)


Ingredients

200g Self raising Flour
400g Caster Sugar
1teaspoon bicarbonate of soda
1 teaspoon vanilla extract
560g Pineapple with Juice
Resources
Scales
Handheld blender
Mixing bowl
Whisk
Muffin tins
Muffin paper
Method


William started by measuring out 200g of self raising flour and then placed it in the mixing bowl.


Next he measured out the caster sugar and added that to the flour in the bowl.
 
 
 
 
William then made a well in the flour and sugar and poured a teaspoon of vanilla extract into the middle.
 
 
 
He then cracked to eggs and added them to the well with the vanilla.

 
William then places the cut pineapple and juice into a small bowl.

 
Using a handheld blender William broke the pineapple down into a chunky puree.

 
He then poured the mix into the mixing bowl with the rest of the ingredients.

 
William then whisked all of the ingredients together until smooth.
 
We did find that it was quite runny and think that the pineapple had too much juice with it so balanced it out with more flour and another egg until it formed a complete consistency.

 
William then placed the paper cases into the muffin tin and measured and shared the mix between them making sure to fill them just to the top.
 
He then placed them into the oven on 180c for 45 minutes or until ready.


Once baked William took them out of the oven and let them cool. When ready they were quite "sticky" to touch which we thought must have been the pineapple juice.

They are super yummy and not as sweet as you would think but were even better with a cup of coffee!

These are super easy to make and we loved them! Despite the fact that it is quite sweet it is a great way to add fruit into something that children would be excited to eat!

Yes please, I'd like some! Great recipe, I think it would be quite nice with fresh pineapple too, maybe this would eliminate the issue with too much fluid in it?

My son was finished his cooking class last month at GIA www.georgia.edu.ph and after that, he really loves to do cooking chores. Will use this recipe this coming Saturday because he is requesting a muffin :D. Will share our experience soon. Thank you for this.
