My Little Chef - Marmalade Gingerbread

William has been looking at baking again and upon us buying some new, child friendly, cookbooks he decided to create a Marmalade Gingerbread.

Ingredients

250g Self-Raising Flour
1 Beaten Egg
90g Butter or Margarine
2 Tablespoons of ground Ginger
1 Tablespoon of ground Cinnamon
150g Golden Syrup
1 Jar of Chunky Marmalade
2 Tablespoons of Hot Water

William started off by carefully measuring out the Flour, Ginger and Cinnamon. He then sifted all 3 into a bowl.

William next weighed the Butter and Golden Syrup out. He decided that by pouring the Syrup that it would be quicker but he later pointed out that the Tin was now sticky so maybe using a spoon might have  been better. He placed both ingredients into a small saucepan, over a low heat and stirred until the butter had melted and formed a smooth liquid.
When ready, he made a small hollow in the centre of the bowl containing the flour, ginger and cinnamon and carefully poured the mixture into the hole. He was very careful when doing this he stated that we needed to be away a little as both the pan and mixture would be hot.

William then broke one egg and added his jar of Marmalade and carefully placed the 2 spoonful's of hot water.

Carefully using the electric whisk he mixed all the ingredients together. Occasionally he stopped and using a large spoon moved the ingredients around the edge back into the middle.

The mixture should be soft and drop off a spoon easily when ready.

He then greased the tin with Cake release and carefully poured the mixture into the tin. William tapped the tin several times on the surface to make sure there wasn't any trapped air pockets. (Something he noticed and pointed out when we last made cake)

The oven was turned on at 180'c, Daddy then carefully placed it in the middle of the oven for one hour.

We had noticed though that the cake had risen and was springy but the centre was still gooey so we put it back in the oven for another 20 minutes.

On completion it was placed on a cake rake to cool for 30 minutes.

The cake was very delicious and morish and really didn't last long. This was a straightforward cake for him to follow and make and I would recommend it as a good recipe to try with children.
