My Little Chef - Stuffed Peppers

 
 
 
William was looking through a new recipe book and came across these; at first I was a little worried if they were too complicated for him but I was pleasantly surprised how easy it was! (In principal you are making a simple Bolognese and placing them into peppers.)
 
Ingredients
 
Peppers
Mince or Quorn
Onions
Mushrooms
Tinned Chopped Tomatoes
Tomato Puree
Garlic
Mixed Herbs
Vegetables (Your choice)
 
 
William started off by cutting the Onions and Mushrooms finely.
 
 
He then placed the Onion and Mushrooms in a pan with the Mince and cooked until browned (we used a Quorn substitute)
 
William then added the tinned tomatoes and two tablespoons of puree.
 
 
He then added a pinch of Garlic granules and mixed herbs and left to simmer.
 
 
William then started on the Peppers. The idea is to cut the top off of the Peppers, however, his judgement on evenly sized cuts was a little off; he worked out though that as long as there is a quarter cut that there was still enough space to fill them.
 
Using a spoon he then dug out the insides of the peppers leaving them completely hollow.
 

 
He next placed a small spoonful of mixed veg into the bottom of each pepper. Taking the Mince off of the hob he carefully filled each pepper with the Bolognese mixture.


 

 
He then placed the tops back on to the peppers. (One thing he noted was how they "didn't all fit" we discussed that it might be best to keep each top with the bottom.)
 
 
Using a little bit of oil, brush it over the peppers evenly and then place in the oven for 20 minutes.

 

 

 
 
Place the peppers on a plate and enjoy!
 
 
We thoroughly enjoyed these and was far easier than we expected to make. They had the mixture of being healthy, engaging and providing some of your 5 a day.
