My Little Chef - Leek and Potato Soup



Making Soup is a popular activity in this household so to be honest I am surprised why we haven't featured it here before. We made this the other week and following our Instagram people wanted the recipe; so here it is!

Ingredients


2 Leeks
2 Medium Onions
Potatoes
1 Pint of Water
1/2 Pint Milk
1 Tablespoon of Flour
1 Tsp of Mustard
Salt and Pepper for seasoning

Method


William started by peeling the potatoes. The majority of the potatoes he kept the skins on and just cut around the areas he needed to.


William the peeled, cut and sliced the Onions and the Leeks. He cut both thinly and placed them in a small saucepan.


Using a little oil (or light spray in our case) lightly fry the Leek's and Onions until soft. He then added 1 Pint of water and the peeled Potatoes and boiled all the ingredients until the Potatoes were soft.


Once soft, William separated the vegetables and liquid. He then placed the Potatoes, Leeks and Onions back into the pan.


Normally we would use a fork and push the ingredients through the sieve but we recently inherited the food blender so used that. William blended the ingredients together to make a puree.



He then added the liquid back to the pan and stirred the liquid and puree together. William then added the Milk and stirred gently. (Cream would ideally work here)


William then added the flour and stirred gently allowing the soup to thicken.



Once the soup had started the thicken William added some Pepper, Salt and the Mustard. He then gently stirred the soup and left it to simmer.





Then when you are ready serve and enjoy!

This is a really simple recipe that children can do. A lot of our soups are very similar in this process. 

William wanted me to a little tip!

"Have some bread to dip in the soup, it tastes yummy!"

Ooh this sounds fabulous Martyn! I will give this a go with Libby, she loves to help me in the kitchen so I'm always on the lookout for cheap, healthy options.x

Ooo fab! It's so easy, especially for children to do. I'm sure she'll love it and you're right, it's a cheap healthy option
