My Little Chef - Hearty Leek and Potato Soup


After making Chicken casserole last week Will has stayed in "Winter Cooking mode" and wanted to make a hearty soup for us. 

Although we enjoy different homemade soups, Leek and Potato soup is always a massive hit in our house. 

So simple to do and with a few little added extras it really stands out for us. 
Ingredients

Leeks
Onions
Potatoes 
Dijon Mustard 
Salt
Pepper
Garlic


Resources
Cutting Board
Sharp Knife
Saucepan
Frying Pan
Blender
Utensils

Method


Will started the soup by cutting the leeks and onions into slices.


He then peeled and sliced the potatoes into small sections. He only peeled the skin that needed peeling and left some of the skin on for flavour.


Will first placed the onions and leek pieces into a frying pan to sautee on a low heat in butter.

He then placed the chopped potatoes into a saucepan to boil until soft.


Once the potatoes were soft Will added the sauteed leeks and onions to the saucepan. He then added a little more water to top up the mixture in the saucepan.

With a handheld blender Will whisked and blended the ingredients to create into one mass.


He added next a small amount of salt and garlic and stirred. Will then added a tablespoon of ground pepper and 2 tablespoons of Dijon mustard and stirred until fully mixed.

Will finally left it on a low heat until ready to serve.


The soup is so easy and, as you can see, doesn't take long to make. 

The added ingredients of garlic and mustard adds a little extra kick that makes it taste better. 

We have previously made a cream leek and potato soup on the blog which is nice but having a recipe where it's the basic ingredients enriches the dish to give you that hearty warm feeling that you need in winter.

Will definitely give this a try - love leek & potato soup but not tried it with dijon & garlic. Great cooking Will - can't wait for you to be on masterchef!
